Changing the global language of an Adobe PDF

Open Adobe Acrobat Pro.
Open the file you want to change the language in.
Click on Menu in the top left.
Click on Document properties... near the bottom of the menu.
Click on the Advanced tab within the Document Properties dialog box.
Select the document's main language, listed under Reading Options (in the last section of the Advanced menu).
Select OK for changes to take effect.
